Cheese and Broccoli Macaroni
Ingredients
- 314 lb (375 g) macaroni
- 3 tablespoons (45 ml) butter
- 3 tablespoons (45 ml) unbleached all-purpose flour
- 2 cups (500 ml) milk
- 1 1/2 cups (375 ml) shredded cheddar cheese
- 1 cup (250 ml) diced cooked ham (optional)
- 2 cups (500 ml) small broccoli florets, blanched for 2 minutes
- 1/4 teaspoon (1 ml) nutmeg
- Salt and pepper
Instructions
- In a large pot of salted boiling water, cook the pasta until al dente. Drain and lightly oil the pasta. Set aside.
- In a saucepan, melt the butter. Add the flour and cook for 1 minute over medium heat, stirring constantly. Add the milk and bring to broil while whisking. Add the cheese and stir until melted. Add the ham, broccoli, nutmeg and pasta. Reheat while stiring. Season with salt and pepper.
