Caramelized Tofu with Pumpkin Seeds

Ingredients

  • 3/4 lb (340 g) firm tofu, cubed
  • 2 tbsp (30 ml) olive oil
  • 1/3 cup (75 ml) vegetable broth
  • 2 tbsp (30 ml) maple syrup
  • 2 tbsp (30 ml) apple cider vinegar
  • 1 garlic clove, chopped
  • 1/4 tsp red pepper flakes
  • 2 tbsp pumpkin seeds
  • 2 green onions, finely chopped

Instructions

  1. In a large non-stick skillet over medium-high heat, brown the tofu in the oil, about 6 minutes. Season with salt and pepper. Add the broth, syrup, vinegar, garlic and red pepper flakes. Let reduce until the liquid has evaporated and the tofu is starting to caramelize.
  2. Add the pumpkin seeds and green onions to the skillet. Continue cooking for 30 seconds, stirring with a wooden spoon, to coat the tofu with the seeds and onions.
  3. Delicious served with mushroom barley or basmati rice.
