Caramelized Tofu with Pumpkin Seeds
Ingredients
- 3/4 lb (340 g) firm tofu, cubed
- 2 tbsp (30 ml) olive oil
- 1/3 cup (75 ml) vegetable broth
- 2 tbsp (30 ml) maple syrup
- 2 tbsp (30 ml) apple cider vinegar
- 1 garlic clove, chopped
- 1/4 tsp red pepper flakes
- 2 tbsp pumpkin seeds
- 2 green onions, finely chopped
Instructions
- In a large non-stick skillet over medium-high heat, brown the tofu in the oil, about 6 minutes. Season with salt and pepper. Add the broth, syrup, vinegar, garlic and red pepper flakes. Let reduce until the liquid has evaporated and the tofu is starting to caramelize.
- Add the pumpkin seeds and green onions to the skillet. Continue cooking for 30 seconds, stirring with a wooden spoon, to coat the tofu with the seeds and onions.
- Delicious served with mushroom barley or basmati rice.
