California-Style Stuffed Turkey Roast
Ingredients
- 1/2 lb (250 g) Toulouse sausage (about 3 sausages)
- 3/4 cup (180 ml) golden raisins
- 3/4 cup (180 ml) whole pistachios, shelled
- 1 mango, peeled and diced
- 2 tablespoons (30 ml) white wine
- Salt and pepper
- 1 turkey breast roast of about 4.4 lbs (2 kg), with the skin, tenders removed

- 2 tablespoons (30 ml) olive oil
- 2 teaspoons (10 ml) curry powder
- 1 cup (250 ml) shallots, finely chopped
- 2 cloves garlic, finely chopped
- 1 cup (250 ml) white wine
- 1 cup (250 ml) chicken broth
