Burrata, Roasted Tomato and Fried Egg Toasts
Ingredients
- 2 cups (280 g) cherry tomatoes, various colours, halved
- 1 tbsp (15 ml) olive oil
- 1 tbsp (15 ml) honey
- 1 tbsp (15 ml) white wine vinegar
- ¼ tsp salt
- 2 tbsp (30 ml) olive oil
- 4 eggs
- 4 slices country bread, grilled
- 1 garlic clove, halved
- 1 burrata (250 g), at room temperature, drained and torn into pieces
- 2 tbsp chives, cut into ½-inch (1.5 cm) pieces
- Fleur de sel
- Red pepper flakes (optional)
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with a silicone mat or parchment paper.
- In a bowl, combine all of the ingredients. Season with pepper. Let marinate for 5 minutes. Drain well.
- Place the tomatoes, cut side up, on the baking sheet. Bake for 15 minutes or until the tomatoes start to soften and are lightly browned.
