Vanilla and Star Anise Blueberry Compote
Ingredients
- 1 vanilla bean
- 3/4 cup (180 ml) sugar
- 1 1/2 lb (675 g) fresh or frozen blueberries
- 3/4 cup (180 ml) apple juice
- 1/2 cup (125 ml) freshly squeezed orange juice
- 6 tablespoons (90 ml) wildflower honey
- 3 star anise
- Grated zest and juice of 1 lime
Instructions
- With the tip of a knife, split the vanilla bean in half and remove the seeds. Set aside.
- In a saucepan, caramelize the sugar until golden brown, about 6 minutes. Add the vanilla seeds and pod and the remaining ingredients. Bring to a boil and simmer for about 15 minutes or until the liquid is syrupy. Remove the vanilla pod and star anise.
- Serve warm over pancakes.
