Ingredients

  • 1 1/2 cups (225 g) whole wheat flour
  • 3/4 cup (95 g) carrot, grated (about 1 large carrot)
  • 1/2 cup (90 g) apple, grated (about 1 apple)
  • 1/3 cup (55 g) pitted dates, diced
  • 1/3 cup (50 g) mixed dried fruits (raisins, apricots, cranberries, figs, etc.)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup (75 g) unsalted butter, melted
  • 1/3 cup (75 ml) honey
  • 2 eggs
  • 1 orange, zest finely grated
  • 1/4 cup (60 ml) orange juice
  • 1/4 cup (40 g) mixed seeds (sesame, flax, chia, hemp, pumpkin, sunflower, etc.)
  • 1/2 cup (115 g) unsalted butter, softened
  • 3 tbsp (45 ml) honey
  • 1/4 tsp ground cinnamon (see note)
  • 1 pinch fleur de sel

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 9 x 5-inch (23 x 13 cm) loaf pan and line with a strip of parchment paper, letting it hang over two sides.
  2. In a bowl, combine the flour, carrot, apple, dates, dried fruit, baking powder, baking soda and salt.
  3. In another bowl, whisk the melted butter and honey with an electric mixer. Add the eggs, one at a time, then the orange zest and juice. Using a wooden spoon, stir in the dry ingredients. Spread the mixture out in the prepared loaf pan. Sprinkle with the mixed seeds.
  4. Bake for 50 to 55 minutes or until a toothpick inserted in the centre of the bread comes out clean. Let cool on a cooling rack for 1 hour. Unmould the bread and cut into slices.
