Double Chocolate Wheat Bran Muffins
Ingredients
- 1 1/2 cups (105 g) wheat bran cereal (All-Bran Original-style)
- 1 cup (250 ml) milk
- 1/2 tsp (2.5 ml) vanilla
- 1 cup (150 g) unbleached all-purpose flour
- 1/4 cup (25 g) cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/2 cup (105 g) brown sugar
- 1/4 cup (60 ml) canola oil
- 5 oz (140 g) dark chocolate, chopped
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a 12-cup muffin tin with paper or silicone liners.
- In a bowl, combine the cereal, milk and vanilla. Set aside.
- In another bowl, combine the flour, cocoa powder, baking powder, baking soda and salt.
- In a third bowl, whisk together the egg, brown sugar and oil. Add the cereal mixture and the dry ingredients. Using a spatula, mix just until the dry ingredients are moistened. Set a few pieces of chocolate aside to garnish the muffins. Stir the remaining chocolate into the bowl of batter. Divide the batter among the muffin cups. Top with the reserved chocolate.
- Bake for 20 minutes or until a toothpick inserted in a muffin comes out clean. Let cool.
