Crème Anglaise

Ingredients

  • 4 egg yolks
  • 1/4 cup (60 ml) sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups (375ml) milk, hot

Instructions

  1. In a saucepan, off the heat, whisk the egg yolks, sugar and vanilla until the mixture whitens.
  2. Gradually add the hot milk while whisking. Cook over low heat, stirring constantly with a wooden spoon until the mixture easily coats the back of the spoon. Refrigerate.
  3. Serve cold over a bowl of fruit and granola.
