Banana Muffins
Ingredients
- 1 ½ cups (225 g) whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground allspice (optional)
- 3 very ripe bananas (see note)
- ½ cup (105 g) brown sugar
- 2 eggs
- ¼ cup (60 ml) 2% plain yogurt
- ⅓ cup (75 ml) vegetable oil
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a 12-cup muffin tin with silicone or paper liners.
- In a bowl, combine the flour, baking powder, baking soda, salt, cinnamon and allspice, if desired.
- In another bowl, coarsely mash the bananas using a fork. Add the brown sugar, eggs, yogurt and oil. Whisk to combine. Using a spatula, gently mix in the dry ingredients just until moistened. Divide the batter among the muffin cups.
- Bake for 22 to 25 minutes or until a toothpick inserted in the centre of the muffins comes out clean. Let cool. Unmould and let cool completely on a wire rack.
