Banana Bread

Ingredients
- 2 cups (240 g) pastry flour
- 2 tsp baking powder
- 1/2 cup (115 g) unsalted butter, softened
- 1 cup (210 g) brown sugar, lightly packed
- 2 eggs, beaten
- 1 tsp (5 ml) vanilla extract
- 1 1/4 cups (310 ml) banana (about 3 bananas), mashed
- 1/2 cup (125 ml) milk
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a 9 x 5-inch (23 x 13 cm) loaf pan and line with a strip of parchment paper, letting it hang over two sides.
- In a bowl, combine the flour and baking powder.
- In another bowl, cream the butter and brown sugar for 1 minute or until light and fluffy. Add the eggs and vanilla and beat until smooth. Add the mashed bananas. With the machine running on low speed or using a wooden spoon, add the dry ingredients alternating with the milk. Spread the batter out in the prepared pan.
- Bake for about 1 hour or until a toothpick inserted in the centre of the cake comes out clean.
- Let cool on a wire rack. Unmould and let cook completely. On a work surface, cut into slices.
