Breaded Tofu Burgers
Ingredients
- 180 ml (¾ cup) unbleached all-purpose flour
- 125 ml (½ cup) water
- 10 ml (2 teaspoons) paprika
- 1 pinch cayenne pepper
- 225 g (½ lb) firm or extra firm tofu, cut into 4 slices
- 45 ml (3 tablespoons) olive oil
- Salt and pepper
- 4 hamburger buns
- Mayonnaise
- Dijon mustard
- 4 large slices Swiss cheese
- 4 large slices tomato
- 4 leaves lettuce
- 1 avocado, firm but ripe, peeled and sliced
Instructions
- In a bowl, combine 125 ml (½ cup) of the flour with the water and spices. Season with salt and pepper. Set aside.
- Sprinkle the remaining flour (60 ml / ¼ cup) on the tofu slices and shake to remove any excess. Coat the tofu in the spicy batter. Set aside.
- In a large non-stick skillet, heat the oil. Brown the tofu slices for 3 to 4 minutes on each side or until crisp. Add oil, if needed. Drain on paper towel.
