Berry Jelly
Ingredients
- 1 to 1 1/2 tsp gelatin (see note)
- 1 cup (250 ml) cranberry juice
- 2 tbsp sugar
- 1 1/2 cups (375 ml) fresh berries of your choice (blackberries, blueberries, raspberries)
- 1 cup (250 ml) 10% plain yogurt
- 2 tbsp (30 ml) honey
- 1/2 cup (65 g) homemade or store-bought granola
Instructions
- In a bowl, sprinkle the gelatin over 1/4 cup (60 ml) of the juice. Let bloom for 5 minutes.
- In a pot, heat the remaining juice and sugar until it dissolves. Remove from the heat. Add the gelatin and stir until melted. Let cool.
- Divide the fruit into 4 dessert cups. Pour in the juice. Refrigerate for 6 hours or overnight.
- In a bowl, combine the yogurt and honey. Spoon the yogurt over the fruit jelly and garnish with granola.
