Beet and Feta Cheese Quiche
Ingredients
- 2 yellow beets
- 2 red beets
- 1 1/4 cups (190 g) unbleached all-purpose flour
- 1 pinch salt
- 1/2 cup (115 g) cold unsalted butter, cubed
- 2 tbsp (30 ml) ice water, approximately
- 1 1/4 cups (125 g) feta cheese, diced
- 1 1/4 cups (310 ml) 15% cream or milk
- 2 eggs, lightly beaten
- 2 tbsp chives, finely chopped
Instructions
- With the rack in the middle position, preheat the oven to 400°F (200°C).
- Wrap the beets individually in foil. Bake for 1 hour 15 minutes or until tender. Let cool. Peel and cut into slices ¼ inch (½ cm) thick. Set aside.
