Soba Noodle Bowl with Beef and Grilled Vegetables
Ingredients
- 4 cups (700 g) sweet potato, peeled and cubed
- 2 red peppers, seeded and thinly sliced
- 2 tbsp (30 ml) olive oil
- 2 tbsp cilantro, finely chopped
- 1 tbsp fresh dill, finely chopped
- 1 red onion, thinly sliced
- 2 tbsp (30 ml) olive oil
- 1 tbsp (15 ml) rice vinegar
- 1 tbsp (15 ml) mirin
- 2 striploin or flap steaks, about ½ lb (225 g) each
- 1/2 lb (225 g) soba noodles
- 3 tbsp (45 ml) soya sauce
- 2 tbsp (30 ml) mayonnaise
- 1 tsp (5 ml) toasted sesame oil
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Spread the vegetables out on the baking sheet and toss with the oil. Season with salt and pepper. Bake for 45 minutes or until the vegetables are tender and lightly browned, stirring them halfway through cooking. Remove from the oven and sprinkle with the herbs.
