Beef and Mango Salad
Ingredients
- 4 thick sirloin steaks (or 675g / 1 ½ lb skirt steak)
- 1 large mango, peeled and cut into thin wedges
- 75 ml (1/3 cup) roasted cashew nuts, coarsely chopped
- 60 ml (¼ cup) chopped fresh cilantro
- 60 ml (¼ cup) chopped Thai basil
- 1 lime, juice only
- Olive oil, to taste
- 1 pinch crushed red pepper flakes
- Salt and pepper
Instructions
- Preheat the grill, setting the burners to high. Oil the grate.
- Lightly oil and season the meat with salt and pepper. Grill the meat for 3 to 4 minutes on each side or until medium-rare. Transfer to a plate and let rest for about 5 minutes. Thinly slice the meat.
- Spread the meat into a large serving platter. Garnish with the mango, cashews and herbs. Drizzle with the lime juice and olive oil. Sprinkle with a little pepper flakes.
