Beef or Chicken Fajitas Skewers
Ingredients
- 3 tablespoons (45 ml) pineapple juice
- 1/2 jalapeño, seeded and coarsely chopped
- 1 clove garlic
- Juice and zest of 1/2 lime
- 2 tablespoons (30 ml) vegetable oil
- 2 teaspoons (10 ml) chili powder
- 1/4 teaspoon (1 ml) salt
- Tabasco sauce, to taste
- 3 plum tomatoes, seeded and diced
- 1/2 jalapeño, seeded and finely chopped
- 1/4 cup (60 ml) red onion, finely chopped
- The juice of 1 lime
- 1/2 cup (125 ml) cilantro, chopped
- 2 teaspoons (10 ml) sugar
- 1 teaspoon (5 ml) salt
- 4 onions, sliced 1/4-inch (6-mm) thick
- 1 tablespoon (15 ml) olive oil
- The flesh of 2 avocados
- 1 tablespoon (15 ml) red onion, finely chopped
- 2 tablespoons (30 ml) jalapeño pepper seeded and finely chopped
- The juice of 1/2 lime
- 1 1/2 lbs (675 g) beef, cut into 32 cubes
- 1 yellow bell pepper, cut into 24 cubes
- 8 7-inch (18-cm) tortillas
- 8 wooden skewers, soaked in water for 30 minutes
- Salt and pepper
- Sour cream
Instructions
- In a blender, purée all the ingredients. Pour the marinade into a bowl. Add the meat and toss to coat. Cover and let marinate in the refrigerator for 3 to 6 hours.
