Baked Salmon and Asparagus with Herb Butter
Ingredients
- 1 1/2 bunch medium asparagus, trimmed (675 g / 1 1/2 lb, approximately)
- 1 tablespoon (15 ml) olive oil
- 1/2 cup (125 ml) chicken broth
- 4 skinless salmon filets, about 6 oz (170 g) each
- Salt and pepper
- 1/4 cup (60 ml) butter, softened
- 2 tablespoons (30 ml) chopped fresh basil
- 2 tablespoons (30 ml) chopped fresh chives
- 1 tablespoon (15 ml) lemon juice
Instructions
- With the rack in the middle position, preheat the oven to 200 °C (400 °F).
- Spread the asparagus on a baking sheet. Drizzle with the oil. Add the broth. Season with salt and pepper. Bake for 5 minutes.
