Avocado, Bacon and Sugar Snap Pea Toasts
Ingredients
- 1 tsp coriander seeds
- ½ tsp black peppercorns
- ½ tsp fennel seeds
- 6 slices bacon, about ½ inch (1 cm) thick
- 2 tbsp (30 ml) mayonnaise
- 1 tsp (5 ml) cider vinegar
- 2 cups (120 g) iceberg lettuce, thinly sliced
- 1 cup (100 g) sugar snap peas, blanched and peeled in half lengthwise with your fingers
- 4 slices white sandwich bread, ¾ inch (2 cm) thick, toasted
- Prepared mustard, to taste
- 1 tomato, sliced
- 1 avocado, sliced
Instructions
- In a coffee grinder or with a mortar and pestle, crush the spices.
