Asian-Style Oven-Baked Chicken
Ingredients
- 1 litre (4 cups) chicken broth
- 500 ml (2 cups) parboiled rice
- 6 skinless and boneless chicken thighs
- 500 ml (2 cups) thinly sliced green cabbage
- 1 onion, thinly sliced
- 1 red bell pepper, cut into strips
- 1 broccoli, cut into large florets
- 115 g (¼ lb) snow peas, trimmed and halved
- 45 ml (3 tbsp) olive oil
- 75 ml (1/3 cup) hoisin sauce
- 2.5 ml (½ tsp) sambal oelek
- Salt and pepper
Instructions
- In a saucepan, bring the chicken broth to a boil. Add the rice. Cover and cook over low heat for about 18 minutes or until the liquid has been absorbed. Remove from the heat. Stir and let rest, covered, for 3 to 5 minutes, until the rice is tender.
