Apricot-Ginger Overnight Oats
Overnight oats (a.k.a. no-cook oats) are prepared the night before to be enjoyed the next morning. To make some, simply place your oats in an airtight jar, then add unsweetened oat milk to rehydrate and soften them. Add dried apricots and candied ginger before refrigerating overnight, and in the morning, add your toppings and enjoy.
Ingredients
- 1/2 cup (50 g) large-flake oats
- 4 dried apricots, diced
- 3/4 cup (180 ml) unsweetened oat beverage
- 1 tbsp chia seeds
- 1 tbsp (15 ml) maple syrup, plus more for serving
- 2 tsp candied ginger, cut into small dice
- Canned apricots, drained and halved
- Roasted pecans, chopped
- Vegan coconut yogurt
Instructions
- In a small bowl or in a 2-cup (500 ml) airtight container, combine all of the ingredients. Cover and refrigerate for 8 hours or overnight, just until the oats are plump and rehydrated (see note).
