All-Dressed Pizza Pockets (The Best)

Ingredients

  • 1 1/4 cups (310 ml) warm water
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (15 ml) honey
  • 2 3/4 cups (415 g) unbleached all-purpose flour
  • 2 tsp (10 ml) instant dry yeast
  • 1/2 tsp (2.5 ml) salt
  • 1 cup (170 g) diced chorizo
  • 2 cloves garlic, chopped
  • 1 tbsp (15 ml) olive oil
  • 2 tbsp (30 ml) tomato paste
  • 2 tsp (10 ml) brown sugar
  • 1 tsp (5 ml) red wine vinegar
  • 1 can 14 oz (398 ml) diced tomatoes
  • Salt and pepper
  • 1 onion, finely chopped
  • 1/4 lb (115 g) white button mushrooms, diced
  • ½ green bell pepper, seeded and diced
  • 2 tbsp (30 ml) olive oil
  • 2 cups (200 g) grated mozzarella cheese
  • Milk, for brushing

Instructions

  1. In a bowl, combine the water, oil, and honey. Set aside.
  2. In a large bowl with a wooden spoon, or in a stand mixer (using the dough hook), combine the flour, yeast, and salt. Add the water mixture and stir until it forms a soft ball. Knead the dough for about 3 minutes on a floured surface or in the stand mixer.
  3. Place the dough in a clean and lightly oiled bowl. Return the dough to coat with the oil. Cover the bowl with a damp cloth and leave in a warm and moist place for about 1 hour or until the dough has doubled in volume.
