Air Fryer Warm Haddock and White Bean Salad

Use the air fryer to cook white fish, then break it into pieces and add it to beans marinated with anchovies, garlic and lemon dressing. This warm salad is ready in less than 20 minutes. Convenient!

Ingredients

  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 ml) lemon juice
  • 3/4 lb (340 g) haddock, cut into 2 pieces
  • 2 anchovy fillets, chopped or 2 tsp (10 ml) anchovy paste
  • 2 garlic cloves, chopped
  • 1 can (14 oz/398 ml) white beans or lima beans, rinsed and drained
  • 1 shallot, thinly sliced
  • 2 tsp sweet paprika
  • 2 cups (50 g) Boston lettuce leaves, torn
  • 3 tbsp mixed herbs, finely chopped (such as mint, parsley, chives)
  • Lemon wedges

Instructions

  1. In a bowl, combine the olive oil and lemon juice.
  2. Place the fish on a plate. Remove 2 tbsp (30 ml) of the oil mixture and use to brush over the fish. Season the fish with salt and pepper. Set the remaining oil mixture aside as a dressing for the salad.
  3. Place the fish in the basket of an air fryer. Cook for 9 to 10 minutes, or more depending on the thickness of the fish, at 400°F (200°C). Remove from the basket. Flake the fish into pieces using a fork.
