Ingredients
- 1 lb (450 g) firm tofu, patted dry and diced
- 1 tbsp (15 ml) soy sauce
- 1/4 cup (35 g) cornstarch
- 1 tbsp (15 ml) vegetable oil
- 1/3 cup (75 ml) peanut butter
- 1/4 cup (60 ml) water or chicken broth
- 2 tbsp (30 ml) maple syrup
- 1 tbsp (15 ml) lime juice
- 1 tbsp (15 ml) low-sodium soy sauce
- 2 tsp (10 ml) sambal oelek
- 1/4 cup (10 g) cilantro, finely chopped
- 3 tbsp roasted peanuts, chopped
Instructions
- Line the basket of an air fryer with parchment paper.
- In a large bowl, combine the tofu with the soy sauce. Add the cornstarch and toss well to coat the tofu. Add the oil and mix well. Season with salt and pepper.
- Spread the tofu out in the basket of the air fryer. Cook for 10 minutes at 400°F (200°C). Stir and continue to cook for 5 minutes or until the tofu is slightly crispy.
