Air Fryer Roasted Chickpea Tacos
These gourmet tacos will appeal to both kids and adults. Plus, as they can be made in the air fryer, it’s difficult to be more efficient. With this technique, the chickpeas become slightly crispy, which makes a delicious contrast with the various toppings that accompany the dish. A Mexican-inspired dish full of crunchiness and freshness!
Ingredients
- 1 can (19 oz/540 ml) chickpeas, rinsed and drained
- 1 small red onion, thinly sliced
- 2 tbsp (30 ml) vegetable oil
- 1 tbsp (15 ml) ketchup
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 2 cups (90 g) curly-leaf lettuce, thinly sliced
- 1 avocado, ripe but firm, cut into thin slices
- 6 soft wheat or corn tortillas, each about 6 inches (15 cm) in diameter, warm
- Sour cream, to taste
- 1/2 cup (50 g) sharp cheddar cheese, grated
- Hot sauce, to taste
- Lime wedges
Instructions
- In a bowl, combine the chickpeas, onion, oil, ketchup and spices. Season with salt and pepper.
- Place the chickpea mixture in the basket of an air fryer. Cook for 14 minutes at 400°F (200°C) or until the chickpeas are nicely browned, stirring halfway through cooking.
- Divide the lettuce and avocado among the tortillas. Garnish with sour cream and the cheese. Top with the chickpea mixture. Serve with hot sauce and lime wedges.
