Air Fryer Harissa Chicken with Mint Couscous

This North African-inspired dish is the perfect meal to serve your guests. Chicken thighs are coated in a mix of Greek yogurt, harissa, honey and lemon for maximum tenderness, and then cooked in the air fryer. Serve the chicken with a mint couscous that’ll bring hints of freshness to the meal.

Ingredients

  • 2 tbsp (30 ml) plain Greek yogurt, plus more for serving
  • 2 tsp (10 ml) honey
  • 2 tsp (10 ml) harissa
  • 1 garlic clove, finely grated
  • 1 lemon, zest finely grated
  • ¾ lb (340 g) boneless, skinless chicken thighs
  • ½ cup (125 ml) chicken broth
  • ½ cup (100 g) couscous
  • 2 tbsp mint leaves, finely chopped, plus more for serving
  • 2 tbsp (30 ml) olive oil
  • 2 tsp (10 ml) lemon juice
  • 1 Lebanese cucumber, cut into small dice
  • 1 green onion, thinly sliced

Instructions

  1. In a bowl, combine the yogurt, honey, harissa, garlic and lemon zest. Season with salt and pepper. Add the chicken and toss to coat well in the marinade.
  2. Place the chicken thighs, rounded-side up, in the basket of an air fryer. Cook for 20 minutes at 375°F (190°C) or until the chicken is cooked through.
