Air Fryer Harissa Chicken with Mint Couscous
This North African-inspired dish is the perfect meal to serve your guests. Chicken thighs are coated in a mix of Greek yogurt, harissa, honey and lemon for maximum tenderness, and then cooked in the air fryer. Serve the chicken with a mint couscous that’ll bring hints of freshness to the meal.
Ingredients
- 2 tbsp (30 ml) plain Greek yogurt, plus more for serving
- 2 tsp (10 ml) honey
- 2 tsp (10 ml) harissa
- 1 garlic clove, finely grated
- 1 lemon, zest finely grated
- ¾ lb (340 g) boneless, skinless chicken thighs
- ½ cup (125 ml) chicken broth
- ½ cup (100 g) couscous
- 2 tbsp mint leaves, finely chopped, plus more for serving
- 2 tbsp (30 ml) olive oil
- 2 tsp (10 ml) lemon juice
- 1 Lebanese cucumber, cut into small dice
- 1 green onion, thinly sliced
Instructions
- In a bowl, combine the yogurt, honey, harissa, garlic and lemon zest. Season with salt and pepper. Add the chicken and toss to coat well in the marinade.
- Place the chicken thighs, rounded-side up, in the basket of an air fryer. Cook for 20 minutes at 375°F (190°C) or until the chicken is cooked through.
