Air Fryer Curry and Mango Pork Tenderloins

In this quick and easy recipe, go with pork tenderloins. Cut them into cubes and coat them in spices before adding them to the air fryer. Once cooked, pour over some sauce made from mango chutney and lime juice. It’s the perfect weekday meal that pairs well with a simple pea and cucumber salad.

Ingredients

  • 1 tbsp (15 ml) vegetable oil
  • 1 tsp baking powder
  • 1 tbsp curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 pork tenderloins, about 3/4 lb (340 g) each, cubed (see note)
  • 1/2 cup (125 ml) store-bought mango chutney, plus more for serving
  • 2 tbsp (30 ml) lime juice
  • 1 red onion, thinly sliced
  • 3 tbsp (45 ml) lime juice
  • 1 tsp sugar
  • 2 cups (300 g) frozen green peas, blanched and cooled
  • 1 English cucumber, sliced into thin halfmoons
  • 1 cup (35 g) cilantro leaves and stems, finely chopped

Instructions

  1. In a bowl, combine the oil, baking powder, spices and salt. Season with pepper. Add the pork and mix well.
  2. Place the pork in the basket of an air fryer. Cook for 10 minutes at 375°F (190°C). Stir and continue to cook for 5 minutes.
  3. Meanwhile, in a small bowl, combine the mango chutney and lime juice.
  4. Remove the basket from the air fryer. Pour the chutney mixture over the pork and mix to coat well. Continue to cook for 5 minutes or until the meat is cooked through and golden. Keep the sauce that has accumulated at the bottom of the basket.
