Yogurt and Kefir Tart

Gastroenteritis, antibiotics and rich foods can all wreak havoc on gut health. This dreamy dessert is not only pretty to look at, it also helps balance your intestinal flora thanks to a kick of kefir, a.k.a. fermented milk.

Ingredients

  • 1 cup (140 g) graham cracker crumbs
  • 1/4 cup (55 g) unsalted butter, melted
  • 2 tsp gelatin
  • 3 tbsp (45 ml) water
  • 1/4 cup (55 g) sugar
  • 1 1/2 cups (375 ml) plain Greek yogurt
  • 1 cup (250 ml) plain kefir
  • Fruits of your choice: thin slices of plums, wedges of fresh figs, pitted cherries, blackberries, raspberries
  • A few small mint or lemon balm leaves

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. In a bowl, combine the graham cracker crumbs and butter. Lightly press onto the bottom and up the sides of a 9-inch (23 cm) pie plate. Bake for 12 minutes, then let cool on a wire rack.
