Sweet Lotus Dim Sum
Ingredients
- 2 cups (500 ml) cake flour
- 2 1/2 teaspoons (12 ml) baking powder
- 1/2 teaspoon (2.5 ml) sugar
- 2 tablespoons (30 ml) vegetable shortening
- 1 egg white
- 1 teaspoon (5 ml) white vinegar
- 1/2 cup (125 ml) warm milk
- 3/4 cup (180 ml) canned lotus paste
- Flour
- 18 parchment paper squares, 2-inch (5-cm) each
Instructions
- In a bowl, combine the flour, baking powder and sugar. Make a well in centre. Add the shortening, egg white and vinegar. Gradually add the warm milk and blend until a ball forms. Knead for 2 to 3 minutes. Cover and let stand for 15 minutes at room temperature.
- Divide the dough into 18 small balls. Flour a work surface and roll out the balls into 5-cm (2-inch) in diameter discs.
- Place about 10 ml (2 teaspoons) of lotus paste in the centre of each disc of dough, fold and shape back into balls. Place on a square of parchment paper and steam for about 10 minutes.
