Strawberry and Cookies-and-Cream Cups
This seasonal dessert is simply delicious. A strawberry purée topped with whipped cream and dried meringue is the perfect reason to stuff your face! A quick and easy recipe the kids will love.
Ingredients
- 1 ½ cups (255 g) fresh strawberries, quartered, plus more for serving
- 2 tbsp sugar
- 2 tsp (10 ml) lemon juice
- 1 cup (250 ml) 35% whipping cream
- ½ cup (20 g) store-bought crunchy meringues, cut into pieces, or more to taste
- 4 Oreo-style cookies, cut into pieces, plus more for serving
Instructions
- In a bowl, using a fork, coarsely mash 1 cup (170 g) of the strawberries with the sugar and lemon juice. Add the remaining strawberries and mix well. Set aside.
- In another bowl, whisk the 35% cream with an electric mixer until semi-stiff peaks form. Using a spatula, gently fold in the meringue and cookie pieces.
- Fill four sundae glasses with half of the strawberry mixture. Cover with half of the cream mixture. Continue layering in the remaining strawberry mixture and remaining cream mixture. Top each glass with a cookie and a strawberry. Serve immediately (see note).
