Slow Cooker Sticky Toffee Pudding

A dessert to die for! A dry dishcloth placed under the lid of the slow cooker will absorb any extra steam. This way, the top of the cake will not get wet.

Ingredients

  • 2 cups (500 ml) 35% cream
  • 2 cups (420 g) brown sugar
  • 2 tbsp unsalted or semi-salted butter
  • 3/4 cup (180 ml) water
  • 1 cup (170 g) pitted dates, finely chopped
  • 1 tsp baking soda
  • 2 cups (300 g) unbleached all-purpose flour
  • 1/2 cup (115 g) unsalted or semi-salted butter, softened
  • 1/2 cup (105 g) sugar
  • 1 tsp (5 ml) vanilla
  • 2 eggs
  • 3/4 cup (180 ml) milk

Instructions

  1. In a pot, bring all of the ingredients to a boil while stirring. Let reduce for 5 minutes. Set aside.
