Sesame Balls (Jian Dui)
Ingredients
- 1 can (14 oz/398 ml) adzuki beans, rinsed and drained
- ½ cup (125 ml) water
- ¼ cup (60 ml) vegetable oil
- ¼ cup (35 g) icing sugar
- 1 cup (130 g) glutinous rice flour, plus more for dusting
- ½ cup (125 ml) water
- ⅓ cup (70 g) sugar
- Vegetable oil, for frying
- ½ cup (70 g) sesame seeds, rinsed and drained (see note)
Instructions
- In a food processor, purée the beans and water until smooth.
- In a small pot over medium heat, bring the bean purée to a boil with the oil and sugar. Simmer, stirring occasionally, until a thick paste forms, about 10 minutes. Transfer into a bowl and let cool.
