Plum and White Chocolate Tartlets

Ingredients

  • 4 red plums, pitted and cut into 8 pieces each
  • 1/2 cup (125 ml) sugar
  • Juice of 1 lemon
  • 1 1/2 cups (375 ml) unbleached all-purpose flour
  • 1/4 cup (60ml) sugar
  • 1 pinch salt
  • 3/4 cup (180ml) chilled unsalted butter, cubed
  • 1egg
  • 1 tablespoon (15 ml) water
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 8 oz (225 g) white chocolate, chopped
  • 1 1/2 cups (375 ml) 35% cream

Instructions

  1. In a saucepan, bring the plums, sugar and lemon juice to a boil, stirring frequently. Simmer for 2 or 3 minutes. Let cool and transfer to a sealable container. Seal and refrigerate until chilled.
