Pink Grapefruit Meringue Pie
Ingredients
- 1 1/3 cups (325 ml) graham cracker crumbs
- 1/4 cup (60 ml) sugar
- 1/3 cup (75 ml) unsalted butter, melted
- 2 teaspoons (10 ml) powdered gelatin
- 2 tablespoons (30 ml) cold water
- 2 tablespoons (30 ml) cornstarch
- 1/2 cup (125 ml) orange juice
- 1/2 cup (125 ml) sugar
- 1 1/2 cups (375 ml) freshly squeezed grapefruit juice (keep the pulp)
- 1 pink grapefruit, cut into skinless segments
- 4 egg whites
- 1/2 teaspoon (2.5 ml) cream of tartar
- 1/2 cup (125 ml) sugar
Instructions
- With the rack in the middle position, preheat the oven to 190 °C (375 °F).
- In a bowl, combine all the ingredients. Lightly press into 23-cm (9-inch) pie plate. Bake for about 8 minutes and let cool.
