Peach, Raspberry, and Ginger Cobbler

Ingredients

  • 1/2 cup (125 ml) sugar
  • 2 tablespoons (30 ml) cornstarch
  • 6 cups (1.5 litres) peaches, peeled and cut into 12 wedges
  • 2 cups (500 ml) fresh or frozen raspberries
  • 1 teaspoon (5 ml) grated fresh ginger
  • 1 1/4 cups (310 ml) unbleached all-purpose flour
  • 1/4 cup (60 ml) sugar
  • 1 teaspoon (5 ml) baking powder
  • 1/4 teaspoon (1 ml) baking soda
  • Pinch of salt
  • 1/3 cup (75 ml) cold unsalted butter, diced
  • 1/3 cup (75 ml) buttermilk

Instructions

  1. With the rack in the middle position, preheat the oven to 190 °C (375 °F).
