Peach, Raspberry, and Ginger Cobbler
Ingredients
- 1/2 cup (125 ml) sugar
- 2 tablespoons (30 ml) cornstarch
- 6 cups (1.5 litres) peaches, peeled and cut into 12 wedges
- 2 cups (500 ml) fresh or frozen raspberries
- 1 teaspoon (5 ml) grated fresh ginger
- 1 1/4 cups (310 ml) unbleached all-purpose flour
- 1/4 cup (60 ml) sugar
- 1 teaspoon (5 ml) baking powder
- 1/4 teaspoon (1 ml) baking soda
- Pinch of salt
- 1/3 cup (75 ml) cold unsalted butter, diced
- 1/3 cup (75 ml) buttermilk
Instructions
- With the rack in the middle position, preheat the oven to 190 °C (375 °F).
