Peach and Almond Crisp

Ingredients

  • 2 lb (900 g) ripe peaches, pitted and cubed
  • 1/4 cup (55 g) brown sugar
  • 3 tbsp (45 ml) lemon juice
  • 1 tsp (5 ml) almond extract or Amaretto-style almond liqueur (optional)
  • 1/2 cup (105 g) brown sugar
  • 1/2 cup (75 g) unbleached all-purpose flour
  • 1/2 cup (65 g) ground almonds
  • 1/2 cup (50 g) quick-cooking oats
  • 1/4 cup (30 g) thinly sliced almonds
  • 1 pinch salt
  • 1/2 cup (115 g) unsalted butter, softened

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Generously butter a 10-inch (25 cm) cast iron pan or an 11 x 8-inch (28 x 20 cm) glass dish.
  2. In a bowl, gently mix all of the ingredients together. Spread out in the prepared pan.
