Paloma Popsicles (Tequila and Grapefruit)
Give a toast with a popsicle? There’s nothing better to do on a beautiful sunny day. These iced lollies are inspired by the Paloma, a classic cocktail made with grapefruit juice, lime juice and tequila. Simply freeze the mixture in popsicle moulds, then eat them in the shade.
Ingredients
- 1 pink grapefruit
- 1/2 cup (125 ml) water
- 1/4 cup (55 g) sugar
- 1 cup (250 ml) pink grapefruit juice
- 1/3 cup (75 ml) tequila (see note)
- 1/4 cup (60 ml) lime juice
Instructions
- On a work surface, cut away the peel of the grapefruit down to the flesh. Cut the grapefruit into 8 half-moon slices, each about ½ inch (1 cm) thick. Place 1 half-moon slice in each cavity of a popsicle mould. Set aside.
- In a small pot, bring the water and sugar to a boil, stirring constantly until the sugar has dissolved.
- In a measuring cup with a spout, combine the grapefruit juice, tequila, lime juice and sugar syrup. Divide the mixture among the cavities of the popsicle mould and insert a popsicle stick into the centre of each one.
- Freeze for 6 hours or until firm. To unmould the popsicles, run the bottom of the mould under warm water.
