No-Cook Strawberry and Mint Jam

Ingredients

  • 6 cups (840 g) fresh strawberries
  • 1 1/2 cups (315 g) sugar
  • 2 tsp (10 ml) fresh mint, finely chopped
  • 1 lemon, the finely grated zest
  • 1 package 45 g freezer jam pectin (Bernardin brand)

Instructions

  1. Coarsely crush the strawberries with a potato masher. Add the sugar, mint and lemon zest. Stir to combine and let stand for 15 minutes.
  2. Add the pectin while stirring, and mix for 3 minutes. Let stand for 5 minutes. Pour into sterilized jars. The jam will keep for 1 year in the freezer or for 3 weeks in the refrigerator.
