Neapolitan Ice Cream Sandwiches

Ingredients
- 1/2 cup (75 g) unbleached all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 tbsp unsalted butter, melted
- 1/2 cup (105 g) brown sugar
- 1 tsp (5 ml) vanilla
- 1 egg
- 3 tbsp mini chocolate chips (see note)
- 3 cups (750 ml) Neapolitan ice cream, softened
- Rainbow candy sprinkles or confetti, to decorate
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line two baking sheets with silicone mats or parchment paper.
- In a bowl, combine the flour, baking powder and salt.
- In another bowl, combine the melted butter, brown sugar and vanilla with a wooden spoon. Add the egg and mix until smooth. Stir in the dry ingredients and chocolate chips. The dough will be a little runny.
- Using a 1-tbsp (15 ml) ice cream scoop, arrange 10 balls of dough on each baking sheet, evenly spacing them out.
- Bake one sheet at a time for 8 minutes or until the edges of the cookies are slightly golden. Let cool completely on the baking sheets, about 30 minutes.
- Place a scoop of ice cream, about ⅓ cup (75 ml), on a cookie. Cover with a second cookie and press down until the ice cream covers the entire surface of the cookies. Repeat this step with the remaining cookies and ice cream. Individually cover each sandwich in plastic wrap. Freeze for 3 hours.
- Place the candy sprinkles in a shallow bowl. Roll the edges of the sandwiches in the sprinkles. Serve immediately.
