Marie-Soleil’s Blueberry Dumplings
Ingredients
- 3 cups (750 ml) fresh or frozen blueberries
- 1/2 cup (125 ml) water
- 2 tablespoons (30 ml) sugar, or to taste
- 2 teaspoons (10 ml) lemon juice
- 1 cup (250 ml) unbleached all-purpose flour
- 3 tablespoons (45 ml) sugar
- 1 teaspoon (5 ml) baking powder
- 1/4 teaspoon (1 ml) salt
- 1/2 cup (125 ml) milk (or soy or almond milk)
- 1 egg, lightly beaten
- 2 tablespoons (30 ml) unsalted butter, melted
- 1 cup (250 ml) 0% plain Greek yogurt
- 1 tablespoon (15 ml) maple syrup
- 1 teaspoon (5 ml) vanilla extract
Instructions
- In a large skillet or saucepan, bring the blueberries, water, sugar, and lemon juice to a boil. Simmer for about 5 minutes. Keep warm.
