Maple Sabayon with Caramelized Pears

Ingredients

  • 3 tbsp (45 ml) honey
  • 2 tbsp butter
  • 6 pears, peeled, cored and each pear cut into six
  • 6 egg yolks 

  • 1/2 cup (125 ml) maple syrup
  • 1/4 cup (60 ml) whiskey

Instructions

  1. In a large skillet, heat the honey and butter over high heat until the mixture begins to brown.
  2. Add the pears and cook for about 4 minutes per side. Reduce the heat if the fruit is browning too quickly. Cook until pears are golden brown. Set aside.
