Mango Lime Pie
Ingredients
- 1 1/4 cups (310 ml) graham cracker crumbs
- 1/4 cup (60 ml) unsalted butter, melted
- 1 tablespoon (15 ml) corn syrup
- 2 teaspoons (10 ml) gelatin
- 2 tablespoons (30 ml) water
- 2 cups (500 ml) fresh mango cubes
- 3/4 cup (180 ml) sugar
- Grated zest of 1/2 lime
- 3 tablespoons (45 ml) lime juice
- 3 eggs
- 3 egg whites at room temperature
- 1 pinch cream of tartar
- 1/2 cup (125 ml) sugar
Instructions
- With the rack in the middle position, preheat the oven to 180°C (350°F).
- In a bowl, combine all the ingredients. Press the mixture evenly on the bottom and sides of a 23-cm (9-inch) pie plate. Bake for about 10 minutes. Let cool.
