Latte Meringue Pie

Ingredients

  • 1/2 cup (125 ml) toasted pecans, finely chopped
  • 1 1/4 cups (310 ml) graham cracker crumbs
  • 1/4 cup (60 ml) sugar
  • 1/3 cup (75 ml) semi salted butter, melted
  • 2 to 3 tablespoons (30 to 45 ml) espresso
  • 2 cups (500 ml) milk
  • 1/3 cup (75 ml) sugar
  • 4 eggs, separated
  • 3 tablespoons (45 ml) cornstarch
  • 1 teaspoon (5 ml) vanilla extract
  • 1 pinch cream of tartar
  • 1/2 cup (125 ml) icing sugar

Instructions

  1. Preheat the oven to 180 °C (350 °F).
  2. In a bowl, combine all the ingredients. Lightly press into a 23-cm (9-inch) pie plate.
  3. Bake for about 10 minutes. Let cool.
