Kumquat Confit

Ingredients

  • 2 cups (500 ml) kumquats, sliced into rings
  • 1 cup (250 ml) water
  • 1 cup (250 ml) sugar

Instructions

  1. In a small saucepan, cover kumquats with cold water and bring to a boil. Drain and repeat twice.
  2. In the same saucepan, bring water, sugar and kumquats to a boil. Simmer gently for about 15 minutes or until they are translucent. Let cool. Cover and refrigerate.
  3. Drain and place as garnish on Mini Vanilla Cupcakes.
