Key Lime Pie (The Best)
Creamy, citrusy, and with a perfectly crisp graham cracker crust, key lime pie is one of Ricardo’s all-time favourite treats. We pushed our pie-making skills to the max (try 12 different versions!) to create the ultimate recipe.
Ingredients
- 1 1/4 cups (175 g) graham cracker crumbs
- 1/3 cup (75 g) butter, melted
- 1 tbsp sugar
- 1/8 tsp salt
- 1 tsp cornstarch
- 3/4 cup (180 ml) juice from key limes (about 25) or regular limes (6 to 8) (see note)
- 1/4 cup (60 ml) sour cream
- 1 tbsp lime zest, plus more for serving
- 3 eggs
- 1 can (300 ml) sweetened condensed milk
- 1 cup (250 ml) 35% cream
- 2 tbsp sugar
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C).
- In a bowl, combine all of the ingredients. Press the crust into the bottom and up the sides of a 9-inch (23 cm) glass pie dish. Bake for 15 minutes. Let cool.
