Giant Ice Cream Sandwich with Chocolate Chips

Ingredients

  • 1 ½ cups (225 g) unbleached all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 pinch salt
  • 1 cup (210 g) brown sugar
  • ¼ cup (55 g) sugar
  • ½ cup (125 ml) mayonnaise (see note)
  • 1 tsp (5 ml) vanilla
  • 2 eggs
  • 1 cup (200 g) semi-sweet or milk chocolate chips
  • 2 cups (500 ml) chocolate ice cream, softened
  • 2 cups (500 ml) vanilla ice cream, softened

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the sides of two 8-inch (20 cm) springform pans with removeable bottoms. Line the bottoms of the pans with parchment paper.
  2. In a bowl, combine the flour, baking powder, baking soda and salt.
  3. In another bowl, whisk the brown sugar, sugar, mayonnaise, vanilla and eggs with an electric mixer until smooth. With the machine running on low speed, or with a wooden spoon, add the dry ingredients, then the chocolate chips. Mix for 1 minute or until smooth and creamy. Divide the mixture between the prepared pans.
  4. Bake for 25 minutes or until the cookies are nicely golden but the centre is still slightly soft. Let cool completely, about 1 hour.
