German Chocolate Sandwich Cookies
Ingredients
- 2 cups (500 ml) flour
- 1/3 cup (75 ml) cocoa powder
- 1 teaspoon (5 ml) baking powder
- 1 cup (250 ml) unsalted butter, softened
- 1 cup (250 ml) sugar
- 2 eggs
- 2 tablespoons (30 ml) milk
- 1 teaspoon (5 ml) vanilla extract
- 1 can 300 ml sweetened condensed milk
- 2 egg yolks
- 1/4 cup (60 ml) unsalted butter
- 1/4 cup (60 ml) brown sugar
- 1 teaspoon (5 ml) vanilla extract
- 1/2 cup (125 ml) unsweetened shredded coconut, toasted
- 1 cup (250 ml) toasted pecans, chopped
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F).Line a baking sheet with parchment paper.
- In a bowl, combine the flour, baking powder and cocoa powder.
- In another bowl, with an electric mixer, cream the butter and sugar until smooth. Add the eggs, milk and vanilla. Beat until the mixture is smooth. Stir in the dry ingredients with a wooden spoon.
- Scoop 15 ml (1 tablespoon) of dough per cookie on the baking sheet. Flatten slightly with moistened fingers.
- Bake for about 13 minutes. Remove from the baking sheet and let cool. Bake the remaining cookies.
