Ganache and Candied Clementine Tartlets
Ingredients
- 1 cup (250 ml) water
- 1/2 cup (125 ml) sugar
- 1 tablespoon (15 ml) corn syrup
- 6 thin slices clementine, about 1/4-inch (1/2-cm) thick (see note)
- 3/4 cup (180 ml) Oreo cookie crumbs
- 3 tablespoons (45 ml) unsalted butter, melted
- 1/4 cup (60 ml) clementine juice
- 1/4 cup (60 ml) 35% cream
- 5 oz (140 g) semisweet chocolate, finely chopped
Instructions
- In a pie plate, combine the water, sugar, and syrup. Cook for 3 minutes in the microwave oven on high to dissolve the sugar. Add the clementine slices and cook for 12 minutes. Let cool. Cover and refrigerate for 24 hours.
