Quick Confit Lemons
Ingredients
- 3 Meyer lemons or regular lemons, cut into 8 wedges each (see notes)
- ¼ cup (60 ml) lemon juice
- 3 tbsp fine salt
Instructions
- In a bowl, combine all of the ingredients. Transfer to an airtight glass jar. Cover and marinate for 24 hours at room temperature, shaking the jar a few times to help dissolve the salt. Refrigerate. The confit lemons will keep for 2 months in the refrigerator.
