Four-Fruit and Ginger Pie
This gorgeous fruit pie with a ginger crust is the perfect way to end a holiday meal!
Ingredients
- 1 cup (210 g) sugar
- 3 tbsp cornstarch
- 2 cups (280 g) frozen sliced strawberries
- 2 cups (250 g) frozen raspberries
- 1 cup (105 g) frozen cranberries
- 2 large Cortland apples, peeled and diced
- 2 cups (300 g) unbleached all-purpose flour
- 2 tbsp brown sugar
- 1 tbsp fresh ginger, finely grated
- 2 tsp ground ginger
- 1 pinch salt
- 3/4 cup (170 g) cold unsalted butter, diced
- 1/4 cup (60 ml) ice water
- 1 egg
- 2 tbsp (30 ml) milk
- Sugar, for sprinkling (optional)
Instructions
- In a pot off the heat, combine the sugar and cornstarch. Add the fruits and toss to cover in the sugar mixture. Over medium-high heat, bring the mixture to a boil, stirring constantly. Transfer to a bowl. Let cool. Cover and refrigerate until ready to use.
