Chocolate Raspberry Crémeux for two
Ingredients
- 3 egg yolks
- 1/4 cup (60 ml) sugar
- 1/2 cup (125 ml) 35% cream
- 4 oz (115 g) dark chocolate, finely chopped
- 2 tablespoons (30 ml) unsalted butter, softened
- 1 oz (30 g) white chocolate, chopped
- 1/3 cup (75 ml) 35% cream
- 1/3 cup (75 ml) fresh or frozen raspberries
- 2 teaspoons (10 ml) sugar
- 2 teaspoons (10 ml) Raspberry liqueur
Instructions
- In a bowl, combine the egg yolks and sugar with a whisk. Set aside.
- In a saucepan, bring the cream to a boil. Remove from the heat and add the chocolate. Allow the melt for 1 minute and stir until smooth. Gradually pour into the egg mixture, stirring constantly.
- Add the butter and stir with a spoon until smooth. Cover and refrigerate for at least 4 hours.
